Truffled Spicchi

Ingredients for 4 people

pici 500 gr,

100gr extra virgin olive oil

fresh truffle about 100 gr,

garlic 2 cloves

1 anchovy fillet,

salt and pepper to taste.


Cook the pasta for the time indicated on the package in boiling salted water.

Carefully wash the truffle and put in a pan the oil, the garlic clove and the anchovy fillet. Heat the oil and melt the anchovy, allow to cool and add the sliced or grated truffle and salt.

Drain the pasta "al dente" and toss it in the pan with the sauce, adding a little cooking water to cream it. Serve with sliced truffle and plenty of pepper.
