Pici with Black Truffle

Ingredients for 4 people:

100g "0" type flour per person (for a rougher pasta add durum wheat semolina),

water to taste.


With flour create the classic mountain with a central hole and start adding water by slowly incorporating all the flour.

Knead the dough, adding flour if necessary, in order to make it compact and small bubbles begin to form on the surface. Cut a small piece of dough and start rolling it on the pastry board with both hands in order to obtain a sort of long spaghetti.
